概要 Do apprenticeships really promote skill formation? Apprenticeship systems have been widely adopted in many fields of skilled professions over a long time. This study scrutinizes the apprenticeship system and its effect on the sake brewing industry in Japan to explore whether apprenticeships promote skill formation and technological advancement. It has been recognized that the apprenticeship system has played an important role in acquiring expertise and competencies indispensable to brewing quality sake. A longitudinal analysis is applied to understand changes to the apprenticeship system since the 1990s and to show that when agency issues arise, the apprenticeship system retards rather than promotes skill formation and technological advancement.
